Traditional Greek Salad
Horiatiki (or Greek village salad) is the original Greek salad, it is made with fresh tomatoes, cucumbers, sliced red onions, kalamata olives, and real feta cheese sprinkled with oregano and extra virgin olive oil.This classic simple Greek salad pairs with almost every Greek dish. Serve with loads of good crusty bread to dip and mop up the gorgeous juices.You can find it on every Greek table and this a perfect example of what I like to call “food worth eating”
Tips & Tricks:
Use quality ingredients. The Horiatiki being such a simple dish needs excellent ingredients. Make sure you have extra virgin olive oil, in-season ripe tomatoes, juicy Greek Kalamata olives(leave them whole), good fragrant oregano and real feta (Greek) cheese. Be careful not to add too much salt, as the feta cheese and the olives are salty enough. Never add leafy greens!
Ingredients:
4 ripe tomatoes, such as Campari, cocktail, or cherry tomatoes, cut in bite-size quarters
1 English cucumber , or 3-4 Persian cucumbers, , halved lengthwise and cut in ½-inch slices
1 cup pitted kalamata olives
½ cup red onion , thinly sliced
¼ cup extra-virgin olive oil
1 teaspoon dried oregano
¾ teaspoon kosher salt
½ teaspoon freshly ground black pepper
8 ounces Greek feta cheese, drained and cut into cubes
Cooking Instructions:
Cut tomatoes into wedges and add the juices. Add onion slices and oregano, then season with salt; mix to combine and allow to sit at room temperature for 30 minutes to allow tomato juices to release.
Mix in cucumber and olives just before serving. Top with feta cheese and drizzle with olive oil.
